Bitterness – along with fruitiness and spiciness – is one of the positive and beneficial characteristics of our extra virgin olive oil. It denotes the presence of antioxidants that are precious for our health, such as polyphenols.

Its intensity depends on the variety of olives and their degree of ripeness at the time of milling: the greener they are, the more intense and bitter the oil ,the earlier the harvest, the less yield, but more pronounced nuances in the fruitness and higher content of polyphenols.

Castello del Barone was scientifically tested in October 2020 at the University of Athens and it was found that oleocanthal and oleacein values were 2.5 times higher than the average (135 and 105 mg/Kg respectively) of the samples included in the international study performed at the University of California, Davis. The daily consumption of 20 gr of our olive oil provides 17,60 mg of hydroxytyrosol, tyrosol or their derivatives. Olive oils that contain >5 mg per 20 gr belong to the category of oils that protect the blood lipids from oxidative stress according to the Regulation 432/2012 of the European Union.

It should be noted that oleocanthal and oleacein present important biological activity and they have been related with anti-inflammatory, antioxidant, cardioprotective and neuroprotective activity.

What makes Castello Del Barone “Collector’s edition” so different?

We extract our olive oil only from olive groves of Koutsourelia Variety, cultivated in well-balanced ecosystems, using the principles of organic farming.

We harvest at specific moments throughout the fall to obtain particular flavor profiles; we carefully pick all the unripe olives and have them immediately cold-rinsed, cold-pressed, on the same day at a certified oil mill. We use special procedures without heat or water application that preserve phenolic content.

Our evoo brings a complex harmony of flavor and texture to foods while being a highly versatile staple in the cooking and seasoning of countless cuisines. As a part of the Mediterranean diet it also delivers monosaturated “good” fats, vitamins, and powerful micronutrients to the cardiovascular system.

It has a smoke point of up to 470 Fahrenheit / 243 Celcius. Studies show that when sautéing with extra virgin olive oil, the bioactive compounds from foods like tomatoes, peppers, onions, and garlic migrate to the oil and are absorbed in greater amounts by the body.
