- 1 egg
- 30ml extra virgin olive oil Castello del Barone
- 200gr egg xylopites (traditional greek pasta)
- 30gr grated parmesan cheese
- 30gr butter
- 1 garlic clove
- Salt / Pepper
Boil the xylopites in salted water and strain.
Put extra virgin olive oil in a pan and fry the egg with the garlic clove.
Put some pasta water in another pan and add the xylopites.
Add parmesan cheese & butter and let them set.
Season with salt and pepper and serve with the fried egg on top.
Finish the dish with freshly ground pepper & Castello del Barone extra virgin olive oil.
