- 400 γρ. red lentil penne
- 5 fresh artichokes peeled, boiled and cut in slices
- 2 finely chopped spring onions
- 200gr cherry tomatoes cut in half
- 100gr white wine
- 80ml Ranis Extra Virgin Olive Oil
Boil the penne in a pot of water. In a pan, sautè the onion and artichokes with olive oil.
Add the cherry tomatoes and continue.
Deglaze with the white wine and add the pasta.
Season with salt and pepper and serve.
