Πέννες απο κόκκινες φακές με αγγινάρες & ντοματίνια

Red lentil penne with artichokes & cherry tomatoes

  • 400 γρ. red lentil penne
  • 5 fresh artichokes peeled, boiled and cut in slices
  • 2 finely chopped spring onions
  • 200gr cherry tomatoes cut in half
  • 100gr white wine
  • 80ml Ranis Extra Virgin Olive Oil

Boil the penne in a pot of water. In a pan, sautè the onion and artichokes with olive oil.
Add the cherry tomatoes and continue.
Deglaze with the white wine and add the pasta.
Season with salt and pepper and serve.
