Quiche Lorraine με μανιτάρια [ Πιάτο του Δημήτρη Καρατζαφέρη ]

Mushroom Quiche Lorraine

  • 1 puff pastry

For the filling:

  • 150gr milk
  • 150gr full fat cream
  • 40gr butter 82%
  • 40gr all purpose flour
  • 100gr shredded graviera cheese
  • 1 egg
  • 40gr onion
  • 40gr leek
  • 100gr mushroom
  • 50gr Ranis Extra Virgin Olive Oil

Make a béchamel with flour, butter, milk & cream.
In a pan, sautè the onion, leek & mushrooms with the olive oil.
Add the vegetables to the béchamel, along with the egg, cheese, salt & pepper.
Spread the puff pastry in a tart pan and bake for 10 minutes at 170◦C.
Add the filling and bake for another 25 minutes at 170◦C.
