- 1/2 Kg baby potatoes
- 100gr. extra virgin olive oil Castello del Barone
- 5gr. fresh lemon thyme
- 5gr. Fresh rosemary
- 1 garlic clove cut in half
- 50gr. Finely sliced onion
- 15gr. salt
- Pepper
Method
Wash the potatoes and, with the help of a saucepan, press them lightly against the kitchen counter so that they break a little but do not smash. Spread the onion on a baking tray lined with parchment paper and place the potatoes on top. Add the herbs, garlic, olive oil and salt and pepper. Bake in a preheated oven at 190◦C for about 45 minutes. Remove from the oven, turn the potatoes over and bake for another 45 minutes until they are crispy on the outside
