- 260gr. all purpose flour
- 2tsp. baking powder
- 240gr. full fat milk
- 24gr. lemon juice
- Orange & lemon zest
- 140gr. sugar
- 70gr. Ranis EVOO
- 70gr. melted butter 82%
- 2tsp. vanilla paste
- 1/2tsp. salt
Mix the milk with lemon juice and set aside for 10 minutes.
Add all the dry ingredients into a bowl and mix.
Add sugar and vanilla paste to the milk mixture and mix.
Add the extra virgin olive oil and mix.
Add all of the above to the bowl with the dry ingredients and mix with a whisk.
Finally, add the melted butter.
Leave the mixture in the refrigerator for at least 1 hour before use.
Preheat the oven to 190◦C, spray the silicone molds with oil and fill them with the mixture.
Bake for 9 minutes.
Tip: you can store the madeleine mixture in a pastry bag in the refrigerator for 2-3 days before using.
