Celery root, chicken & pomegranate salad

  • 200gr. finely sliced celery root
  • 30gr. Castello del Barone EVOO
  • 40gr. finely sliced carrot
  • 30gr. pomegranate
  • 12gr. lime juice
  • 15gr. spring onions
  • 4γρ. Άνηθος
  • 35gr. orange fillets
  • 100gr. chicken “apaki”

Grill the apaki chicken for 2 minutes on each side.
Put the celery and carrot into a bowl, then add the extra virgin olive oil and lime juice and let them marinate for 5 minutes.
Add all the other ingredients and mix.
Serve the salad and put the chicken on top.
Finish the dish with Costello del Barone extra virgin olive oil.
