EVOO Soft Cookies

  • 410gr butter
  • 170gr sugar
  • 40gr Castello del Barone EVOO
  • 1tsp. vanilla paste
  • 80gr. eggs
  • 460gr. soft flour
  • 15gr. baking powder
  • 460gr. chocolate drops suitable for baking

Beat the butter, extra virgin olive oil, sugar & vanilla in the mixer with the whisk attachment over medium to fast speed.
When the mixture becomes foamy, lower the speed and gradually add the eggs.
With the flat beater attachment at slow speed, incorporate the flour, baking powder & chocolate.
Continue until the mixture is homogenized.
Shape into 90gr biscuits.
Bake in a preheated oven at 160◦C for 15 minutes.
