Chocolate Mousse with Extra Virgin Olive Oil & Caramelized Walnuts

For the chocolate mousse

  • 200gr chocolate 57%
  • 120gr extra virgin olive oil Ranis
  • 4 eggs
  • 80gr caster sugar
  • 20gr Espresso
  • 20gr orange liqueur or amaretto
  • 80gr coarsely chopped walnuts
  • 25gr powdered sugar
  • 1 tsp orange liqueur or amaretto
  • 1/4 tsp bukovo [ optional ]

Method

In a water bath melt the chocolate with the butter. Separate the yolks from the egg whites and beat the egg whites together with half the amount of sugar into a soft meringue.
Beat the egg yolks with the other half of the sugar until fluffy.
Incorporate the yolk mixture into the chocolate mixture.
Add the espresso and liqueur. Finally, add the meringue with light movements with the help of a marize.
Pour into glasses and put in the fridge to freeze.
Mix all the ingredients for walnuts and bake in the oven for 4-5 minutes at 180C.
Serve by putting the walnuts on the mousse.
