Grilled shrimps with passion fruit, tomato vinaigrette, edamame & lime

For the tomato vinaigrette

  • 100ml balsamic vinegar
  • 140ml Ranis extra virgin olive oil
  • 1 Tsp mustard
  • 1 Tsp honey
  • 1 finely chopped tomato

Mix all ingredients in a blender

For the shrimps

  • 10 shrimps with their shell
  • 1 lime
  • 1 passion fruit
  • Some dill
  • 30gr edamame
  • 40ml Ranis extra virgin olive oil

In a hot pan with olive oil sauté the shrimps on both sides for about 3 minutes.
Deglaze with lime. Serve with some tomato vinaigrette, passion fruit flesh, a few sprigs of dill & edamame.
