For the tomato vinaigrette
- 100ml balsamic vinegar
- 140ml Ranis extra virgin olive oil
- 1 Tsp mustard
- 1 Tsp honey
- 1 finely chopped tomato
Mix all ingredients in a blender
For the shrimps
- 10 shrimps with their shell
- 1 lime
- 1 passion fruit
- Some dill
- 30gr edamame
- 40ml Ranis extra virgin olive oil
In a hot pan with olive oil sauté the shrimps on both sides for about 3 minutes.
Deglaze with lime. Serve with some tomato vinaigrette, passion fruit flesh, a few sprigs of dill & edamame.
