- 360ml extra virgin olive oil Ranis
- 550gr flour 55%
- 50gr fine semolina
- 100gr white sesame
- 100gr almond fillet
- 360ml water
- 200gr sugar
- 50gr honey
For the oil pie
To make the syrup, put the water, sugar & honey in a saucepan and bring to a boil, then continue boiling for 5 minutes on medium heat.
Preheat the oven to 180C.
In a saucepan over high heat, add the extra virgin olive oil and slowly add the flour and semolina, stirring constantly with a wooden spoon.
Roast the flours until they reach a dark color to create a thick porridge.
Then add the syrup in portions, continuously mixing until it is absorbed by the porridge and we have a homogeneous mixture.
Spread extra virgin olive oil on a baking sheet with the help of a brush and sprinkle the whole surface with sesame seeds.
Add the pie mixture and spread with your fingers.
Sprinkle with the almond fillet and cut the pie into squares.
Bake for about 1 hour.
Remove from the oven and sprinkle with cinnamon if desired.
