For the orzo
- 250gr orzo
- 100gr chopped onions
- 80ml white wine
- 700ml vegetables broth
- 100gr Champignons mushrooms
- 100gr Portobello mushrooms
- 100gr Golden Trumpets mushrooms
- 80gr grated Parmesan
- 80gr butter
- 50gr extra virgin olive oil
- Salt / Pepper
In a pan we sautee the onions with evoo.
We add the orzo and continue stirring. We add the white wine and then the vegetable broth spoon by spoon.
In an other pan we sautee the mushrooms with evoo and add some wine & we add them at the orzo pan.
When the orzo is ready we put some Parmesan & Butter along with Salt & Pepper.
We add some evoo at the end & we serve.
