- 1 eggplant
- 1 zucchini
- 100gr pleurotus mushrooms
- 1 red long pepper
- 1 garlic clove
- 3gr grated parmesan cheese
- 30gr balsamic vinegar cream
- 40gr extra virgon olive oil Castello del Barone
- Salt / Pepper
Cut the eggplant and zucchini into thick slices.
Cut the pepper in half.
Clean the pleurotus mushrooms.
Place in a bowl together with the chopped garlic, extra virgin olive oil and salt & pepper and mix.
Place in a baking tray onto parchment paper and bake in a preheated oven at 180C for 20 minutes.
Remove from the oven and pour the balsamic cream on top.
Serve with rocket salad with Castello del Barone extra virgin olive oil and grated parmesan.
