For the Beef Tartar
- 350gr beeffillet
- 35gr choppedcapers
- 50gr choppedonion
- 15gr dijonmustard
- 25grs mustard seeds
- 35gr Extra Virgin Olive Oil
Preparation
Finely chop our beef and mix with the rest of the ingredients
for the jalapeño mayonnaise
- 250ml Extra VirginOlive Oil
- 1 eggyolk
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- 1 jalapeño pepper
- salt / whitepepper
Preparation
Mix the egg yolk and mustard with the help of an egg beater. Slowly add the olive oil until it is incorporated and at the end add the lemon, the chopped pepper & salt and pepper.
Assembly
Take some small tortillas and pass them through a frying pan for 1 minute to soften. Add the tartar and mayonnaise. Finish with a little sliced onion.
Brioche Roll with Beef Tartar
Assembly
Take an uncut brioche toast, and cut a very thick slice, spread butter and place in a hot pan in order to caramelize it. Cut the slice lengthwise and add the tartar. Garnish with a few sprouts & extra virgin olive oil.
