Τσουχτή Μάνης

“Tsuhti” pasta from Mani

  • 1 egg
  • 30ml extra virgin olive oil Castello del Barone
  • 200gr egg xylopites (traditional greek pasta)
  • 30gr grated parmesan cheese
  • 30gr butter
  • 1 garlic clove
  • Salt / Pepper

Boil the xylopites in salted water and strain.
Put extra virgin olive oil in a pan and fry the egg with the garlic clove.
Put some pasta water in another pan and add the xylopites.
Add parmesan cheese & butter and let them set.
Season with salt and pepper and serve with the fried egg on top.
Finish the dish with freshly ground pepper & Castello del Barone extra virgin olive oil.
