For the scrambled eggs
- 3 egss
- 25gr full fat heavy cream
- 25gr unsalted butter
Break the eggs into a pan, add butter, salt and pepper, and place over medium heat. Beat the eggs with a spoon and mix constantly until you have a creamy texture. Add the heavy cream and remove from heat.
In the center of a plate, place a slice of toasted sourdough bread. Put the scrambled eggs on top and half of an avocado into thin slices on top. Garnish with lime slices, some extra virgin olive oil & black sesame.
