Cake με Εξαιρετικό Παρθένο Ελαιόλαδο & Γιαούρτι με Πορτοκάλι

Cake with Extra Virgin Olive Oil & Yogurt with Orange

For the cake

  • 3 eggs
  • 170gr caster sugar
  • 170gr extra virgin olive oil Castello del Barone Ranis
  • 1 tsp vanilla extract
  • 230gr self rising flour
  • 1 pinch of salt
  • 150gr greek style yogurt
  • Orange zest

Method

In the mixer bowl with the paddle attachment beat the sugar, eggs, olive oil and vanilla at medium speed for 3 minutes.
Reduce the speed and add flour and salt. Beat for 2 minutes until incorporated.
Pour the mixture into the cake mold & bake in the oven at 180◦C for 50 minutes.
Remove from the oven, leave in the mold for 20 minutes, unmold, let cool for 40 minutes.
In a bowl, mix the yogurt with the orange zest and spread the mixture over the cake.
Add some walnuts and serve.
