Chocolate Banana Bread

For the Banana Bread

  • 120gr all purpose flour
  • 1 tsp baking soda
  • 63gr. cocoa powder
  • 1/2 tsp fine sea salt
  • 1 tsp vanilla extract
  • 180gr bananas
  • 1 egg
  • 40gr extra virgin olive oil
  • 30gr melted butter
  • 75gr brown sugar
  • 65gr caster sugar
  • 125gr full fat yogurt
  • 125gr chopped dark chocolate

Method

Preheat the oven to 180 C. Grease a loaf pan and line it with parchment paper.
Mash the bananas with a fork and then gradually whisk in extra virgin olive oil, butter, egg, vanilla & yogurt.
Add sugar and continue to stir.
In a separate bowl, mix all dry ingredients – flour, cocoa, soda, salt and add to the liquid mixture.
Add chocolate and stir. Pour the batter into the prepared pan and bake for 50-60 minutes.
Remove from the oven, let cool for 20 minutes and then serve.
