Focaccia ranis


For the focaccia

  • 500gr Type 00 flour
  • 35gr fresh yeast
  • 1 pinch of salt
  • 1 T.s. extra virgin olive oil
  • 350 gr lukewarm water


Put all the ingredients in a mixer bowl and beat at medium speed for 7 minutes using the hook attachment. Transfer to an oiled bowl and rest for about 1 hour at approximately 28◦C. Transfer to a well oiled baking pan. Spread the dough with your hands to cover the entire surface of the pan. Cover and rest for another 1 hour. Preheat the oven to 200◦C. Sprinkle extra virgin olive oil on the surface and press with your fingers, creating bubbles. Add salt, and bake for 15-18 minutes. Remove from the oven, place the focaccia onto a grill and let it cool before cutting it.
