For the potatoes
- 1Kg potatoes, peeled and cleaned
- 50gr extra virgin olive oil
- Salt/pepper
Method
Cut the potatoes into slices and spread them on a tray. Sprinkle with extra virgin olive oil, and salt and pepper. Bake in the oven at 180c for 20 minutes.
Synthesis
Fry the eggs in a pan with extra virgin olive oil. Serve with a slice of toasted sourdough wholemeal bread & season with salt and pepper.
