Salad with grilled peaches, mozzarella, raisins, pine nuts & white balsamic vinaigrette

For the vinaigrette

  • 100ml white balsamic vinegar
  • 140ml Castello del Barone extra virgin olive oil
  • 1 tsp mustard
  • 1 Tsp honey

Mix all ingredients with a blender

For the salad

  • 1 package of mesclun salad
  • 2 grilles peaches
  • 10 mozzarella balls with the brine
  • 30gr of raisins
  • 25gr of pine nuts

Put the salad, raisins & pine nuts in a bowl together with 2 spoonfuls of the white balsamic vinaigrette.
Mix and serve with the grilled peaches & mozzarella balls.
