For the vinaigrette
- 100ml white balsamic vinegar
- 140ml Castello del Barone extra virgin olive oil
- 1 tsp mustard
- 1 Tsp honey
Mix all ingredients with a blender
For the salad
- 1 package of mesclun salad
- 2 grilles peaches
- 10 mozzarella balls with the brine
- 30gr of raisins
- 25gr of pine nuts
Put the salad, raisins & pine nuts in a bowl together with 2 spoonfuls of the white balsamic vinaigrette.
Mix and serve with the grilled peaches & mozzarella balls.
