Sardines Marinated with Olive Oil & Chili

For the sardines

  • 1Kg sardines, cleaned
  • 28gr white wine vinegar
  • 100gr extra virgin olive oil
  • 25gr finely chopped parsley
  • 25gr finely chopped dill
  • 5 spearmint leaves, chopped
  • 1 chili pepper, chopped
  • Lime zest

Method

Put the sardines in a bowl with the vinegar, cover with cling film and store in the fridge for 4 hours. Rinse the sardines well, store them in olive oil and keep for 2 weeks in the refrigerator.
