For the sardines
- 1Kg sardines, cleaned
- 28gr white wine vinegar
- 100gr extra virgin olive oil
- 25gr finely chopped parsley
- 25gr finely chopped dill
- 5 spearmint leaves, chopped
- 1 chili pepper, chopped
- Lime zest
Method
Put the sardines in a bowl with the vinegar, cover with cling film and store in the fridge for 4 hours. Rinse the sardines well, store them in olive oil and keep for 2 weeks in the refrigerator.
